It was last summer and the regularly frequented lunch cart was suddenly uninspiring. A block away from where I work, a brand new biofueled mobile food truck was serving vegan dishes with some ingredients harvested directly from the owners’ garden. The Gmonkey Mobile Farm 2 Street truck is run by husband and wife team Mark Shadle, award-winning chef and Ami Beach Shadle aka “The Detox Diva”.
Many of Connecticut’s small cities are strikingly impoverished with very little access to fresh healthy food in many neighborhoods. Gmonkey Mobile is a small step toward rectifying this plight by offering a seasonally-inspired menu heavily sourced from local farms and food producers. Considered the nation’s very first all-vegetarian, eco-friendly food truck, all ingredients are natural, organic, and fair-trade whenever possible.
Gmonkey’s ever changing menu items include vegan donuts, fresh squeezed juices, salads, wholesome warm soups, locally-produced cheeses, fresh-baked bread, and finger-licking sweet potato fries (cooked in 100% vegetarian canola oil). Chef Mark, who has more than 20 years extensive gourmet restaurant experience, says, “The ingredients that go into our dishes are of the same top-notch quality and freshness used at top restaurants.” He and his wife aim to bust the preconceived notions of typical street vending foods. In fact, their mobile kitchen shortens the distance between farmers and your plate.
In addition to the food, everything used during preparation and serving is as environmentally low impact as possible all the way down to their vegetable-based plates and biodegradable napkins & utensils. Even the resulting food scraps are recycled and composted at home on Shadle Farm in Durham, CT.
